At the counter
We are on the Varjota restaurant strip, with an eight-seat counter at the heart of the room. That is where the sushi chef cuts the fish in front of you, builds the rodízio sequence and tells you what came in best that day. Salmon and tuna arrive fresh every morning; the white fish comes from fishermen along the Ceará coast. To go with it: sake poured into a wooden masu, and caipisakes made with fruit in season.
In Japanese, nagisa means the water's edge: a nod to Fortaleza's seafront.
